Cucumber, Tomato & Dill Summer Salad

With summertime comes a lot of tomatoes and cucumbers, either from your own garden or a garden of a friend or family member. Instead of bemoaning the abundance, I like to make a lot of salads with these delicious produce items. The recipe I am sharing today is one of my favorites. It works well as a light lunch or as a side dish for dinner. This is also a great dish to take to a picnic or summer party. 

Ingredients: 

  • 2 cups chopped tomatoes (any type of tomato works well for this salad)
  • 4-6 cucumbers (depending on side) peeled and chopped or sliced 
  • ¼ cup chopped red onion (optional)
  • 2 tbs. chopped dill weed, or more if you prefer
  • ½ cup crumbled feta feta cheese
  • 2 tbs. olive oil
  • 2 tbs. red wine vinegar 
  • Freshly ground salt and pepper 

Instructions: 

  • Mix together tomatoes, cucumbers and onions 
  • Add dill weed and stir 
  • Whisk together olive oil and red wine vinegar then pour over the salad mixture 
  • Add salt and pepper to taste 
  • Top with feta 
  • *Feel free to add more or less of each ingredient to make certain flavors more magnified
